Authentic Refried Beans

Ingredients:

Oil
1/2 Onion, finely diced
2 Cooked Chillies, diced (pre-bought) or 1/2 teaspoon Chilli Powder
1 Can of Beans in Water (can be any type of bean, but keep the water they come in)
Salt

1. Heat a little oil in a frying pan, add the onion and a little salt over the top to help them sweat, stir occasionally.

2. When the onions have turned opaque add the chilli and mix through the onion.

3. While they continue to cook put the beans with the water into the blender, blend until smooth.

4. Add to the onion and chilli mixture. Keep stiring, do not allow to burn as this will change the flavour. Allow the mixture to simmer until it thickens, you will see the texture change as you are stiring.

5. Taste and adjust seasoning. Serve hot or cold. Keep in cover container in the fridge and they should last around 4 days.
