Succulent Grilled Chicken Breast Recipe

This is very basic BBQ chicken breast recipe. In this recipe I use chicken breasts, and because chicken breast meat tends to dry in the cooking process, I love to marinade it. This marinade will make the most succulent chicken breast you can imagine.

Since the marinade is like a cocktail, you never know how much you’ll need. You have to have enough to cover the meat. So for marinade I’ll talk ratios and not quantities.

4 chicken breasts (you can use more or less, use as much as you need)

Marinade

1 part vinegar

1 part wine or beer

1 part soy sauce

1 part any vegetable oil, you can use extra virgin olive oil or any other oil you like.

1 part water


1. I use plastic bags for marinating the meat. Put chicken breasts in the plastic bag.

2. Pour the marinade ingredients straight over the meat, close the bag and shake it well.

3. Leave meat to marinate for 10-60 minutes outside or up to 12 hours inside the fridge, and then you can BBQ it.

4. BBQ the meat, it takes about 4-5 minutes aside. Sprinkle with salt and pepper. Try not to flip the meat too much, and please, please, please don’t overcook the meat. If you’re a little bit insecure, use instant read thermometer to read the exact internal meat temperature; it shouldn’t be more than 160F (72C).

5. Remove the meat from the heat and let it sit for 4 minutes before you start eating.

My “Twist’ for this chicken breast recipe: be creative with your marinade, play with different wines, vinegars, and salty sauces; for example you can substitute soy sauce for Worcestershire sauce, just keep the ratios. Playing with marinade ingredients creates really easy variations and definitely makes our life much more interesting.
