Corn is the most anticipated summer vegetable. You can’t have summer grilling and not to have corn on the grill. I think this is the best of easy grilled vegetable recipes.
6 corns on the cob
Herbs butter
3 ounces (100g) soft unsalted butter
1 teaspoon thyme
1 teaspoon sage
1 large garlic clove
salt, pepper to taste
1. Clean the corn and put it on top of medium-hot grill.
2. Grill the corn for about 1 minute a side (don’t overcook it). The corn should be a little bit caramelized (brownish) but still juicy.
Herbs butter
1. The next step you can do in advance, if you like. In a chopper chop garlic until finely chopped, then add the herbs. Continue to chop until everything is finely chopped, and only then add butter, salt and pepper.
2. Combine everything and put inside small serving dish. Refrigerate the herb butter until you decide to use it. Chill it for at least 20 minutes.
3. Serve the corn hot covered with herb butter.
My extra flavorful “Twist” for this easy grilled vegetable recipe: you can upgrade this herb butter with zest and juice from 1 lemon. This way the sourness of the lemon balances the sweetness of the corn. This butter will also be perfect with hot grilled shellfish.
