Crock Pot Roast Beef

1 teaspoon of minced garlic
1/2 large onion sliced
3 cups of low sodium beef stock or beef broth
3 cups of water all in a crock pot

Instructions:

Preheat a large skillet on medium high heat with no oil or butters in it you want the pan dry. Next rinse the roast with water. dry off completely with a paper towel. From here add your dry rub and make sure you even season the top and the bottoms of the roast. Roll the meat over so the fat is facing down and place in the hot pan to sear it. this only takes a couple of minutes and make sure you use a large fork or kitchen tongs to turn the meat. Sear all sides top and bottom then place in the liquid that is in the crock pot. Cook on low for about 6-8 hours depending on how you prefer the degree of doneness.
