Easy chicken enchilada recipe is really fun and easy to prepare. This dish can feed 8 people.

1 onion, chopped
1 ¾ cup shredded cheddar cheese
1/2 pint (235 g) sour cream
1 tablespoon dried parsley
1/2 teaspoon dried oregano
salt, pepper to taste
1 (15 ounce) can tomato sauce
1/2 cup water
1 tablespoon chili powder
1/3 cup chopped green bell pepper
1 clove garlic, minced
8 (10 inch – 25 cm) flour tortillas
1 (12 ounce) jar taco sauce
1. Preheat the oven to 350F (175C).
2. In a medium non-stick skillet over medium heat cook cubed chicken, onion, sour cream, 1 cup cheddar cheese, parsley, oregano, salt and ground black pepper. Heat until the cheese melts.
3. Stir in salt, tomato sauce, water, chili powder, green pepper and garlic.
4. Roll even amounts of mixture in the tortillas. Arrange in a 9x13 inch baking dish.
5. Cover with taco sauce and 3/4 cup of cheddar cheese.
6. Bake uncovered in preheated oven for 20 minutes.
7. Cool 10 minutes before serving.
My time saving “Twist”: you can do the preparations evening before and the next evening just roll up tortillas and heat.
My second time saving “Twist”: in order to save time you can also use food processor to slice the vegetables.
