Easy Chicken Fajita Recipe

This easy chicken fajita recipe is a nice easy dinner for your TV night with your friends.

2 yellow onions, sliced

3 green bell peppers, seeded & sliced

Optional: 1 jalapeno pepper seeded & chopped fine (this will add fire - omit if milder fajitas are preferred)

2 tablespoons vegetable oil

3-4 chicken breasts prepared (taken from easy chicken breast recipe - click on the link)sliced into strips 1/2 x 2 inch (1 x 5 cm)

1/2 teaspoon salt

1 teaspoon ground black pepper

1 teaspoon cumin

1/4 cup fresh, mild salsa

1 pkg. fresh, large flour tortillas

Condiments: Freshly grated Monterey Jack or cheddar cheese, guacamole, chopped fresh tomatoes, fresh salsa or sour cream.


1. Sauté onions and peppers in oil over medium heat until onions are translucent.

2. Increase heat to high and add chicken. Sauté quickly until chicken is just warm.

3. Add salt, pepper, cumin and salsa and turn heat to low. Simmer for 5 minutes.

4. Heat tortillas by either putting 3 (2 inch – 5 cm) slits on top of plastic tortilla bag and heat on high setting in microwave for 3 minutes. Or wrap tortillas in foil and heat in oven at 350F (180C) for 10 minutes.

5. Serve fajitas by placing 1/4 cup of chicken mixture in a center of warm tortilla. Add desired condiments and fold edges over center. Then roll up tortilla burrito-style. 6. It makes 12 fajitas.

My time saving “Twist”: you can do the preparations evening before and just heat and roll up tortillas burrito-style the next evening.

My second time saving “Twist”: in order to save time you can also use food processor to slice the vegetables.
