Easy Chocolate Cake Recipe

This easy chocolate cake recipe done in a microwave. Seriously you can make chocolate cake from scratch under 15 minutes and make it healthy with my special “Twist”. This recipe will save you when you have unexpected guests or just a sudden urge for something sweet.

4 tablespoons cocoa powder

1 teaspoon baking powder

1¼ cups all purpose flour

1 cup sugar

½ cup sunflower oil or any tasteless oil like grape seed

3 eggs

1 teaspoon vanilla extract

1 cup hot coffee (or 1 cup boiled water and 1 teaspoon instant coffee)


Mix in a bowl all dry ingredients including instant coffee if you use one.

Add to dry ingredients eggs, oil and mix.

Now add hot coffee or hot water (depends what you're using) and mix fast – it’s important because if you won’t, the eggs will become scrambled.

Transfer the batter to oiled 9in(22cm) glass pan or English cake glass pan and microwave on high settings for 8 minutes. That’s it the cake is done (yes, that fast).

The cake is perfect warm or cold. Now you can add easy chocolate frosting to this cake. It will make this cake even more chocolaty, and that's always a great thing. There is no such a thing like too much chocolate.

Now let’s “Twist” this cake and make it extremely healthy. Just substitute white flour for the same amount of chickpea (garbanzo beans) flour. And substitute sugar for the same amount of maple syrup dark grades. Then proceed with the recipe as written.

You can add a fragrant “Twist”: make it chocolate orange cake, just add 1 tablespoon of orange zest.
