Easy curry chicken recipe is a very affordable recipe. You can use a whole chicken cut to pieces, drumsticks or thighs. This recipe is one of my favorite one pot dinner dishes.
2 potatoes, peeled and chopped into chunks
1 red onion, peeled and chopped
10 baby carrots cut in half
6 chicken thighs bone in / 8 – 10 drumsticks / whole chicken cut to pieces
1.5-2 tablespoons curry paste or curry powder (traditional Indian yellow curry paste is the best)
1 cup water
1 teaspoon granulated sugar
salt to taste
ground black or white pepper to taste
1. Chop all the vegetables approximately to the same size 1 inch (2.5 cm).
2.Put the vegetables on the bottom of slow cooker. Put the chicken on top of the vegetables.
3. Mix well ½ of the amount of curry paste or curry powder, water, granulated sugar, salt and pepper.
4. Pour the mixture on top of the vegetables and meat.
5. Plug the slow cooker for 4 hours on Low heat. In the last half an hour taste the seasoning and add the other half of curry if needed.
To add a very unique flavorful “Twist” to this recipe: put 1 cup of coconut milk instead of water.
