Another thing that you have to consider when you buy fish and shellfish is their source. You always have to try to buy sustainable wild caught varieties. Although farmed rainbow trout is a very good sustainable and environmental source. Shellfish when it’s farmed in ocean, especially in North America is excellent and extremely sustainable way to enjoy seafood.
The taste of seafood brightens up with acidity. The most popular acids are lemon and lime, but other acids like good quality vinegars and wines are used too.
