Easy fried chicken recipe is a very friendly recipe and you can use pretty much any part of the chicken in this recipe.
1 quart (1L) oil for frying
1 cup bread crumbs
1/4 cup grated Parmesan cheese
1 teaspoon of garlic powder
salt, pepper to taste
1/2 cup mayonnaise
2 chipotle chilies in adobo sauce or to taste
6 chicken thighs or 8 drumsticks
1. Heat oil in a deep-fryer or large saucepan to 375F (190C).
2. Combine the bread crumbs, Parmesan cheese, garlic powder, salt and pepper in a bowl. Set aside.
3. Place mayonnaise and chipotle peppers into a blender/
chopper and puree until smooth.
4. Scrape the mayonnaise mixture into a plastic bag. Add the chicken parts and coat evenly with the mixture.
5. Take out the chicken parts from plastic bag and press into bread crumbs mixture. Shake off any excess.
6. Cook the chicken parts in hot oil until the breading is golden brown and the chicken parts are no longer pink inside, for about 8-10 minutes.
7. An instant-read thermometer inserted into the center should read internal meat temperature at least 165F (74C).
To add extra flavorful “Twist”: add ½ teaspoon of cumin to the bread crumbs.
