This easy greek salad recipe is very fresh and extremely healthy and good for you.
1 large tomato
½ English cucumber
1 bell pepper, any color you like
1 medium red onion
¼ cup pitted olives (black or green)
4 oz (120g) cubed feta cheese
3 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1 minced garlic clove
salt, pepper to taste
1. Cut the vegetables to ½ moons.
2. Mix in a big bowl all the ingredients together including garlic and liquids, toss well and serve.
My extra flavorful "Twist" for this easy Greek recipe: add 1 teaspoon of zaatar- it's spice blend that widely common in the Mediterranean area. This spice blend is based on thyme, oregano, sesame seeds and may contain other dry herbs and spices.
If you can’t find it add 1 tablespoon of fresh oregano.
