This easy pasta salad recipe is a truly gourmet salad, but very easy to prepare.
1 (1 pound/454g) package of your beloved bite size pasta
1 can sliced beats
1 can tuna (preferable in oil)
2 garlic cloves
¼ cup balsamic vinegar red or white
2 tablespoons fresh oregano or fresh thyme (or 1 tablespoon of each)
salt, pepper to taste
¼ cup extra virgin olive oil (only if you are using tuna in water)
1. Cook the pasta in a gallon (4L) of boiling water, seasoned with 2 tablespoons of salt (that's right, 2 tablespoons!) until just tender. Drain but do not rinse the pasta. Don't worry if the pasta sticks together. The dressing will break it up.
2. Drain beats and add them to the pasta.
3. Add whole tuna with oil into the pasta (if you're going to use tuna in water drain it before adding to pasta and add olive oil).
In a chopper - chop garlic, fresh herbs (thyme and oregano). Add to chopper balsamic vinegar, salt and pepper and combine them together making a paste.
4. Add the paste to pasta salad and mix well.
My “Twist” for this recipe: you probably will have left over’s of this salad. Don’t throw them away. Just add a 1-2 tablespoons of vinegar and a little bit of salt. And “Walla” once again you’ll have a tasty and alive salad for later.
