Easy Picnic Recipes

I love picnics! Take easy picnic recipes, prepare the food and go outside to enjoy beautiful hot summer day (or any other day) with your family and friends. Load your picnic table with simple, delicious and beautiful food. I'll give you few easy picnic recipes ideas that will definitely take out the stress of cooking the food and leave you with a happy feeling of excitement about your upcoming picnic.

This recipe I tend to make on two occasions: the first one as I mentioned for picnics because it's tasty, simple and easy to take with you. The second occasion is when I know that unexpected guests are coming over very soon or/and vegetarian guests.

1 roll butter puff pastry ½ pound (250g), usually it comes in 2-roll package. If you have 1 pound (454g) roll of pastry use half of the roll (most of the time, I tend to use whole package of pastry).

2 ounces (50g) blue cheese or any sharp goat cheese, even feta cheese will do the work.

1 large tomato or ½ cup cherry, grape, or yellow small tomatoes.


1. Butter puff pastry usually comes frozen. Defrost the pastry in refrigerator over night (this is the preferable way). But sometimes or actually most of the times, I need to defrost the pastry in a hurry, so just leave it outside for 10-20 minutes. If you can’t unroll the pastry hold it in your hands and the heat of your hands will defrost the pastry.

2. Crumble blue cheese on top of the pastry.

3. If you use large tomato, slice the tomato to quite thin circles. If you use any kind of small tomatoes, cut them into the half’s and distribute them evenly over the top.

4. Place the pizza on top of baking tray that covered with parchment paper. I usually buy butter puff pastry that already comes covered with parchment paper so I use this paper.

5. Put the tray into cold oven, and it’s very important that the oven will be completely cold. Apply 350F (175C) heat for about 30-35 minutes or until the edges of the pastry will be puffed and light golden.

6. Chill and serve or pack for the picnic.

To add extra flavorful “Twist”: add a splash of rosemary infused oil or sprinkle ½ teaspoon of finely chopped rosemary before putting the pizza into oven.
