Easy Salsa Recipe

This easy salsa recipe is fresh, hot and you can make just it in minutes.

2 plum tomatoes

1 peeled garlic clove

1 red bell pepper

1 jalapeno pepper

½ bunch cilantro leaves and stalks

½ lime

½ cup extra virgin olive oil

salt, pepper to taste

1. Wash thoroughly the vegetables and deseed bell pepper.

2. Chop roughly the vegetables and place them in a food processor, squeeze the lime over them.

3. Season with salt and pepper.

4. Process them until they become a paste.

5. Continue to process and start slowly to add oil.

6. Pour salsa into serving bowl and serve with tortilla chips.

My extra flavorful “Twist” for this recipe is to use this salsa to make the best sauce for the fish. Take deep frying pan, place 1lb (454g) of tilapia fillet in it and pour the salsa on top. Bring to a boil, then lower the heat and simmer for 7 minutes. Close the heat and let it stand for a few minutes.

Cheers,
Victoria Paikin
