Easy Shrimp Scampi Recipe

Easy shrimp scampi recipe is a very high impact, rewarding dish that you can rustle up well under 10 minutes.

1lb (454g) fresh shrimps (if you buy frozen defrost)

3 garlic cloves

½ bunch parsley

¼ cup Parmesan

2 tablespoons butter

½ lemon

salt, pepper to taste

Take the shrimp and wash it.

Slice garlic cloves and finely chop parsley.

On medium low heat melt the butter and add garlic.

Sauté them for 10 seconds, then add shrimp and half the amount of parsley, squeeze lemon and season with salt and pepper.

Let the shrimp cook until it just changes the color to pink. It will take 5 minutes or so.

Close the heat and add Parmesan and the rest of parsley.

Serve the scampi on top of your beloved long pasta like spaghetti, linguini or fettuccine.

The healthy “Twist” for this recipe: instead of serving it on bed of pasta serve it on bed of baby spinach leaves. Just adjust the seasoning.

Cheers,
Victoria Paikin
