In my opinion, my easy soup recipes are the most comforting recipes out there. My family and I just love soups. In wintertime I make hot heavy meaty soups and in the summertime I make fresh fruits and vegetables soups that easily can be eaten cold, or even soups that don’t require cooking what so ever.
The classical bases for the soups are broths that made from meat and fish or stocks that made from bones and fish shells, fish heads and fish bones.
Soups can be made from pretty much anything. The general rule that I follow is that soups should be made “low and slow”; low heat and long preparation time. Beauty of the soups is that they are very good when reheated; it means that you can store leftovers in the fridge and eat them for 3 days. In a lot of times I’m making a lot of soup and we’re eating it for a few days.
The truth is that my easy soup recipes are really forgiving. I mean that even if it seems that the shopping list is endless, there are easy substitutes and the soup anyway will be good without one ingredient or two. To make the soups even easier you can use frozen vegetables. They are conveniently cleaned, peeled and ready to use.
