My favorite easy spaghetti sauce recipe is pesto. You can make it in minutes and serve it with spaghetti or any other pasta you like. It can be perfect for fish too.
2 cups fresh basil leaves, packed
3 medium sized garlic cloves
1/2 cup freshly grated Parmesan-Reggiano or Romano cheese
1/3 cup pine nuts or walnuts
salt, pepper to taste
1/2 cup extra virgin olive oil
1. Put all the dry ingredients - basil leaves, garlic cloves, Parmesan, pine nuts or walnuts, salt and pepper in a food processor and chop for 10 seconds.
2. Add olive oil and chop for another 30 seconds, or until the ingredients will become a paste.
3. Serve with spaghetti or any other pasta, toast bread or as a salad dressing.
My flavorful “Twist” for this pesto sauce recipe: you can substitute fresh basil leaves for the same amount of cilantro, parsley (preferable flat leave Italian) or chives. Every time you will have a different flavor of sauce.
Another flavorful “Twist” for this recipe: add lemon juice from 1 lemon to the sauce. Take 2 pounds (1 kg) of boneless skinless salmon and put in a casserole dish. Pour the sauce over the fish and bake for 18-20 minutes in preheated oven to 375F (190C).
