Those easy to make dessert recipes and certainly easy to eat, are always welcome in my home, especially when I have unexpected guests.
Guilt free dessert
This is extremely easy to make dessert recipe. It’s very summery, absolutely guilt free and certainly mood lifting dessert.
This recipe serves 3.
1lb (454g) low fat cheese like quark, cottage or ricotta. You can use homemade cheese as well in this recipe click here.
½ cup full fat natural yogurt (optional)
2-4 tablespoons maple syrup, honey, agave syrup or plain old sugar
1lb (454g) mixed berries
1. Mix cheese with yogurt and maple syrup (or any other sweetener of your choice). Use yogurt to thin the cheese. If your cheese is thin like cottage don’t use yogurt at all.
2. Add ½ of the berries to mixture and combine.
3. Give it a try and adjust the sweetness.
4. Scoop to one big or 3 personal dishes and add the rest of berries on top.
To add my exotic “Twist”: add ½ teaspoon of ground cinnamon and ½ teaspoon of ground cardamom. It’s goes the best with honey as a sweetener.
To add a sophisticated “Twist”: add 1 teaspoon of natural vanilla extract.
Summery dessert
This is my number one easy to make dessert recipe. I don't think you'll find more simple dessert out there.The amounts are for one helping. If you need it for more people just multiply the amounts for your needs. This recipe is perfect for large parties. There is absolutely no work except of making coffee and to assemble.
1 large Ice cream scoop of any kind, preferable vanilla, coffee or chocolate flavor
¼ cup espresso coffee or if you can’t get it, strong coffee will do
3 tablespoons Baileys liquor
1. Take small cup or even wine glass or any other small beautiful dish of your choice and start to assemble: first put large ice cream scoop, then pour coffee and at the end add Baileys liquor.
To make flavorful “Twist”: just diversify, play with different ice cream flavors, different liquors. For example, orange liquor instead of Baileys will be perfect on top of chocolate ice cream.
Eton mess
This is an easy and luscious way to light up summery desserts.
1.5 lb (750g) diced strawberries
1 teaspoon vanilla extract
1 tablespoon high quality balsamic vinegar or pomegranate juice
1 tablespoon sugar
3 cups whipping cream
4 large meringues or 6 medium
1. Mix strawberries, vanilla extract, balsamic vinegar, sugar and set aside.
2. Meanwhile, whip the cream to soft peaks. Smash the meringues with your hands on top of the cream and add 2/3 of strawberries. Mix all the ingredients well.
3. Then transfer into a big glass bowl or to 6 individual martini glasses and spread the rest of the strawberries on top.
My healthy, colorful and fruity "Twist" for this recipe: just substitute the strawberries for any other berries of your choice or even kiwi fruit or mango. Luscious!!!
Cheesecake
Healthy unstructured cheesecake, very luscious all year round dessert that brings summer light to cold, wintery days.
7oz (200g) sour cream
¼ cup powdered sugar
1lb (500g) quark low fat cheese or same amount of baker’s cheese
8oz (250g) mixed dry fruits
2oz (50g) dark chocolate
1. In one bowl, mix with hand mixer for a few minutes sour cream with ½ the amount of sugar.
2. In the other bowl, mix with hand mixer quark cheese with another ½ the amount of sugar.
3. Then mix those two together with a spoon.
4. Cut dry fruits to smaller pieces, if they cut to large ones. Hold back ¼ cup of the dry fruits and the rest mix with cheese-sour cream mixture.
5. Transfer the mixture to serving dish of your choice.
6. Spread the remaining of dry fruits on top and grate the chocolate on top as well.
My extra flavorful and time saving “Twist”: if you don’t have time to chop the dry fruits or you just don’t like them, you can take out the sugar and dry fruits and substitute them with ½ cup of your beloved jam with fruit pieces.
As you can see those are really easy to make dessert recipes, that you can easily make in no time for your family and friends for any occasion or just to spoil them.
