Easy Zucchini Bread Recipe

easy zucchini bread recipe

Easy zucchini bread recipe is the way to make your child or grandchild to eat zucchini.

1 1/3 cups sugar

2 eggs, beaten

2 teaspoons vanilla extract

3 cups grated fresh zucchini

2/3 cup melted unsalted butter

2 teaspoons baking soda

pinch of salt

1/2 teaspoon nutmeg

2 teaspoons cinnamon

3 cups all-purpose flour


1. Preheat the oven to 350F (175C).

2. In a large bowl mix together wet ingredients: sugar, eggs, vanilla, grated zucchini (to save time do it in a food processor) and then add the melted butter.

3. In another bowl mix dry ingredients: baking soda, salt, spices and flour.

4. Mix dry ingredients into wet ingredients. Add 1/3 of dry ingredients to wet ingredients each time.

5. Divide the batter equally between 2 buttered 5x9 inch loaf pans.

6. Bake for 1 hour. Check if the bread is done after 50 minutes, or until a wooden pick inserted into the center comes out clean.

7. Cool the bread in pans for 10 minutes. Then remove from the pans and place on wire racks to cool thoroughly.

To add extra crunchy “Twist”: add 1 cup of walnuts or pecans.

To add extra texture “Twist”: add 1 cup of dried cranberries or raisins.

However, if you want to add unforgettable “Twist”: add 1 cup of mixed dry fruits and nuts (make sure to add dried ginger to the mixture as well).

Tip - in order to distribute evenly nuts seeds and dry fruits in the batter, mix them with a little bit of flour (it doesn’t give the chunks to sink) and then fold them into the batter.
