This is grilling time! This is my take on grilled pizza. This recipe is very tasty and absolutely simple. It's a perfect side dish or entry for any picnic. And the most important, it’s prepared just in minutes.
2 pita bread or Indian Naan bread, even flour tortillas will do
5oz (125g) any grated cheese - I used old cheddar and mozzarella
1 9oz (225g) jar roasted red and yellow peppers or any color peppers you like
1. On each flat bread put about 2oz (50g) cheese.
2. On one put red peppers and at the end sprinkle a little bit more cheese.
3. On a second repeat the process just with yellow peppers and sprinkle with cheese.
4. Put your flat bread on top of hot grill or BBQ or even very hot oven will do the work. Grill them for 2-3 minutes or until the cheese melts and flat bread becomes crispy.
My first versatile “Twist” for this grilled pizza is my encouragement to be creative. For example, 1 tablespoon of pesto sauce from jar and the same amount of mozzarella cheese will be an absolute delight.
My second versatile “Twist”: 2oz of smoked gouda cheese with a few wedgies of thinly sliced pear will do the magic.
My Mediterranean “Twist”: 2 tablespoons of Mediterranean zaatar herb mixed with 1 tablespoon extra virgin olive oil will amaze you. If you can’t find zaatar just use 1 ½ tablespoons of thyme and 1 teaspoon of sesame seeds mixture instead.
