Halloween Gratin

Ingredients
-1 Medium Pumpkin
-1 Boneless Chicken Breast
-1 Onion
-1 Carrot
-1/4 cup Green Peas
-1/4 lb Yellow Zucchini
-1 tablespoon Butter
-1 tablespoon Flour
-1 cup Milk
-1/2 cup Shredded Mozzarella Cheese

Directions
1.Preheat the oven to 390 degrees F.
2.Cut the 1/4 of top of pumpkin off. Take seeds out and wrap with plastic wrap and heat in a microwave until tender. Scoop inside of pumpkin. Transfer the pumpkin pulp to the bowl, mash and add milk and flour.
3.Cut chicken into bite size. Chop onion and cut carrot and zucchini into small cubes. Drain can of green peas.
4.In a sauce pan, heat butter and saute onion and chicken. Then add carrot, zucchini and green peas. Season with salt and pepper. Cook over midium heat until vegetables tender 10 min.
5.Add pumpkin mixture to the sauce pan. Cook over low heat for 7-8 minutes.
6.Then pour the filling into the hollowed-out pumpkin and bake for 15 minutes.
7.After 15 minutes, take the pumpkin out of the oven and sprinkle mozzarella cheese on top and put it back in the oven. Bake for another 5-10 minutes or until cheese melts.
