Easy kofta recipe with the best Moroccan fragrant.
3 garlic cloves
1 small peeled potato
1 small onion
½ pound (250gr) ground beef
½ pound (250gr) ground lamb (preferable) or ground pork
2 tablespoons powdered coriander
½ teaspoon cumin
½ teaspoon turmeric
½ teaspoon chili flakes
salt, pepper to taste
¼ cup frying oil
1. In a food processor or a chopper chop garlic, then add potato and onion. Chop until reaches puree stage.
2. In a large bowl combine vegetable puree, two kinds of meat, spices, salt and pepper. Mix with your hands until well blended.
3. Make medium size patties on the sheet and pop them into fridge for ½ an hour (it’s absolutely not necessary, but it makes them better).
4. Heat the vegetable oil in a skillet over medium-high heat. Cook the patties in the hot skillet, until cooked to your desired degree of doneness (5 to 6 minutes per side for well done). An instant-read thermometer inserted into the center should read 160F (70C). You can barbeque them as well. You can grill them as well.
5. Serve them on the top of couscous pile.
My time saving “Twist” for this recipe: double the recipe, make the patties and freeze half of the amount for future usage.
