Mini Cranberry Pies

This recipe is so fun to make, and the pies always come out adorable! These are an easier and more impressive take on pie. I make these for my family in the days leading up to Christmas. We sometimes change up the filling. Pecan is delicious too!

(Makes 12 mini pies)

Ingredients:

3/4 cup cranberries

prepared pie dough

2/3 cup water

2/3 cup sugar


Directions:

Roughly chop the cranberries. Set aside. Add the water and sugar to a small saucepan over medium heat. Do not stir. Allow the sugar to dissolve.

When the sugar-water solution is syrupy and the sugar is completely dissolved, stir it into the chopped cranberries.

Roll out the pie dough into a large sheet. Using a circular cookie cutter, cut out 12 rounds. Press the circles into a mini muffin tin. Spoon some of the cranberry mixture into each cup.

If you wish, cut thin strips of pie dough and weave a lattice pattern over your mini pies. Alternately, cut small rounds, press them on top and cut slits.

Bake the pies at 350 degrees for 8 minutes. Allow to cool for 10-15 minutes.
