This extremely easy fragrant Moroccan chicken recipe meant to be done in tagine, but for the easy preparation I make it in slow cooker and it turns up absolutely perfect. And the best part is that the house smells sensational and so welcoming for hours.
1 onion, sliced
3 sweet potatoes, sliced
½ cup dry figs, quartered
½ cup raisins
12 chicken thighs, bone in
2 teaspoons cinnamon
1 teaspoon cumin
3 pods cardamom
salt, pepper to taste
2 apples, sliced to 8 pieces each
¼ cup honey
Juice from 1 lemon
1.5 – 2L water
1. Take 7-quart slow cooker and layer onion.
2. Then layer sweet potatoes on top of the onion.
3. Sprinkle ½ of the figs and ½ of the raisins on top.
4. Then arrange chicken in one layer on top. If you have 5-quart slow cooker layer the chicken in 2 layers.
5. Sprinkle the cinnamon, cumin, cardamom, salt and pepper on top.
6. Then add apple slices and the rest of the dry fruits.
7. Add honey and lemon juice.
8. Cover everything with water. Food should be just covered with water.
9. Plug it on high setting for 5 hours.
10. Serve with rice and enjoy.
To add my time saving “Twist”: just add 2 cups off uncooked couscous into the sauce when you unplug your slow cooker. Close the lead and let it stand for 10 minutes and then just dig in.
