Not So Scary Jack-O-Lantern Potatoes

Peas For the Stems (you can score the tops)
Carrots and peas ( I prefer steaming). You can take out the cream cheese or replace with low fat
Ingredients:
8 Russet Potatoes
1/2 cup Sliced Carrots
1/3 cup Sweet Peas
1/3 cup Boiling hot Chicken Broth
1/2 Cup of Butter
1/3 Cup of Milk
8 Slices of Bacon
1/2 Colby Jack cheese
1 1/2 cups Water
4 oz. Cream Cheese
Servings: 4
Prep time: 10-15 min
Cook time: 10-25 min
Directions:
Step 1:
Preheat oven to 375 F.
Step 2:
Prepare your potatoes by cutting in halves and putting each slice in cold water. When ready draw with an X-acto Knive or a Sharp Knive (Be Careful!) a Jack-O-Latern or maybe even a skull look.
Trace out the design on only one side.
Step 3:
Scoop out the insides of the potato and reserve in a large bowl. You can use an ice-cream scoop. You can boil in a large pot for about 20-30 mins or you can just add a dash of water and microwave 10-12 mins, it is a lot quicker.
Step 4:
While potato filling is cooking, combine Chicken Stock and carrots in a blender or food processor. I steamed my carrots, but you can just microwave with water and butter. This takes about 5-7 mins on high heat. If you can puree them another way you can do so.
Step 5:
Place Potato Shells on an aluminium cook sheet and coat with butter. Bake 10-15 or just heat up in the microwave 5-10 mins.
Step 6:
Drain potatoes, carrots and peas. In a medium bowl combine 3/4 potato/ carrot mixture, 1/4 cup cheese and bacon. Use a small bowl for the potato/ pea mixture. Combine well.
Step 7:
When potatoes are finished you can scoop the mixture out into both sides of the potato. You can score the potatoe and create a stem with the pea mixture in a piping bag. The Carrot mixture just needs an ice cream scoop.
Step 8:
Turn on the Broiler or use a High Heat. Bake 5-7 mins in the Broiler and a little longer if in the oven.
Step 9:
Top with reserved bacon and cheese if desired. Serve and enjoy.
