Easy Chinese Inspired Red Pork Salad

If you have any leftover pork, just in minutes you can make this easy pork salad for your healthy lunch.

2 hands-full of your beloved pre-washed lettuce or mix leaves

1 sliced red bell pepper

1 hand-full of snow or sweet peas

2 stalks of green onions, finely chopped

Dressing

1 inch (2.5cm) ginger

2 teaspoons soy sauce

2 tablespoons olive oil

ΒΌ teaspoon Chinese five spice blend to echo the taste of pork

The star of the dish is shredded warm or cold pork (taken from Red Chinese pork recipe click here)


1. In a chopper - chop all the ingredients of the dressing and let them to mix well.

2. Then toss well with the rest of ingredients.

As you can see, this recipe can be a dish by itself. And frankly you can "Twist" it with any leftover meat, prawns or salmon.
