Quick Easy Chicken Recipes

I have a bunch of quick easy chicken recipes that are basically variations of the same recipe. They are my true standbys and saviors bunch of recipes and they are there for me when I need quick and easy dinner solutions.

2 onions

2 pounds (1kg) of any chicken parts you like (I prefer bone in chicken thighs or whole jointed chicken)

5-10 garlic cloves peel on

salt, pepper to taste


1. This is perfect base to a great dish. Preheat the oven to 375F (190C).

2. Slice the onions to half moons, preferable in a food processor.

3. Layer the onion on the bottom of baking dish. Put chicken parts on top of the onion.

4. Take the garlic cloves and distribute them evenly between the chicken parts (leave the peel on, that way the garlic won’t burn and will remain sweet inside).

5. Sprinkle salt and pepper on top of the chicken.

6. Bake in oven for 50-60 minutes.

7. Serve with salad or side dish of your choice.

Frankly this recipe is tasty by itself, you don't have to add anything to it. A lot of times when I don't have time I'm doing this recipe as it is. But if you want easily to change your everyday quick easy chicken recipes, just use whatever you have at home.

For example to add “Twist “, you can make beautiful lemon and thyme chicken. Just cut one lemon into approximately 8 cubes and distribute them evenly between the chicken parts. Sprinkle about 2 teaspoons of dried thyme. Then drizzle about tablespoon of olive oil or any vegetable oil that you have at home. Then proceed with the steps.

Another "Twist" to this recipe: if you have at home sweet chilli sauce and soy sauce you can upgrade this recipe to Asian style. Just add 3 tablespoons of sweet chilli sauce, 3 tablespoons of soy sauce and 2 tablespoons of your beloved vinegar. Mix everything together and rub the chicken parts with the mixture. Then proceed with the steps.

Those are only two examples on how you can make quick easy chicken recipes with tons of flavor without any of the labor.

My extra festive "Twist” for this recipe: take half the amount of chicken parts and add to baking dish your beloved sausages. It can be Italian mild sausages or spicy ones or any kind of pork or beef sausages you like. And then proceed with the steps.

My suggestion to you, if you want to make your life easier and you want to prepare quick easy chicken recipes, just be creative with the basics. Open your fridge and see what you have there. Then just add 2 pounds of cubed vegetables. It can be any root vegetables like potatoes, beets or even turnip. It also can be bell peppers, carrots, but preferable any mix of vegetables for extra flavor. Then you can add herbs to the dish if you like. That way it instantly becomes one pot dish dinner. Bake the dish for about an hour and you'll have perfect easy dinner recipe every time.
