Zucchini Casserole

My Cozy Christmas Zucchini Casserole Recipe

Ingredients:
2 medium zucchini
2 medium summer squash(yellow)
1 medium onion
2 medium potatoes(yukon gold)
1/2 green bell pepper
1/2 red bell pepper
1 teaspoon salt or salt to taste
1 tablespoon garlic power
1 teaspoon coarse black pepper
1/4 cup extra virgin olive oil
1/2 cup grated sharp cheddar cheese

Directions:
Slice zucchini, yellow squash(long way).
Peel yukon gold potatoes (cut long way).
Slice onion into medium slices.
Jullienne red and green pepper bell pepper.
Spray square pyrex dish with cooking spray.
Layer potatoes on the bottom.
Follow with a layer of yellow squash, layer zucchini, layer onion.
Sprinkle red, green, and black pepper, then garlic powder and salt.........repeat layering.
Drizzle olive oil over entire casserole. Cover.
Cook at 350 degrees for 45 minutes.
Sprinkle with cheese. Cook until cheese is melted.
